Attendees will have the opportunity to try the components that make up Ailsa Bay 1.2 Sweet Smoke before tasting the final product. The components that make up the tasting session are Ailsa Bay Virgin Oak Cask 62.5% ABV, Ailsa Bay ex-Hudson Quarter Cask Sample 58.6% ABV, Ailsa Bay Refill American Oak Cask 60.9% ABV, and Ailsa Bay First Fill Bourbon Cask 59.5% ABV before finishing with Ailsa Bay 1.2 Sweet Smoke. This is a particularly exciting opportunity for whisky fans to gain a better understanding of how casks are selected to create a dram. These samples are not available to try anywhere else, making this Digital Drams session a truly one-of-a-kind event. The final result, Ailsa Bay 1.2 Sweet Smoke, is a truly outstanding expression. Distilled at Girvan and overlooking Ailsa Craig, Ailsa Bay is the only Scotch whisky to undergo a micro-maturation whereby the spirit is filled into small ex-bourbon casks for an intense rapid maturation, before being transferred to virgin, first-fill, and refill American oak casks for several years. The nose has wood smoke and heater with sweet vanilla oak and candied orange peel. The palate is a perfect balance of peat and vanilla sweetness, with fruit and toffee emerging.
