This single malt celebrates Bere barley, Britain’s oldest cultivated grain. A tougher grain to work with than the norm, the result is a splendid texture. Unpeated, this was distilled in 2011 and is aged in first fill American oak ex-bourbon casks for 10 years, a mixture of Jim Bean, Jack Daniels and Clermont Springs. Then, Islay spring water is added. This expression is non-chill filtered, and colouring free. Its strength lies at 50% abv, and it is a limited edition release.
The nose opens with a bouquet of floral aromas, with hints of citrus, barley, and apricot jam. The taste packs in a delicate array of flavours, with hints of chocolate lime, dried banana chips, apricot and malted bread. On the finish, the coastal air breezes in, a fruity character with a salty salinity arrive, holding right to the end. A fruit-punch.
