Holyrood Distillery’s new make spirit series celebrates Edinburgh’s history of distilling, and this punchy number draws on a number of influences. It combines Crystal and Chocolate malts alongside its own malt in the mashbill, and takes the curious step of adding Edinburgh Ale yeast to its own. The result if a multi-faceted, hearty expression with layers of flavour.
