Rum

Rum is a spirit made from the by-products of sugar production, sugar cane or molasses, which are fermented and then distilled. It is a subtle spirit which can be sipped neat or mixed in cocktails, such as the mojito. There are so many variations to rum, from the methods of distillation, to the aging process, which makes it one of the most diverse and varied spirits. White rums are usually non-aged and often served with mixers, while old rums are aged in oak barrels for several years, resulting in a dark amber colour and notes of vanilla, caramel or leather depending on the types of barrels used.
