Hibiki, meaning “resonance” was launched in 1989 to commemorate Suntory’s 90th anniversary, and has ever since been embraced as the paragon of The Art of Japanese Whisky, the very product of Japanese nature and her people. Hibiki is a blend of Japan’s 24 seasons from its three soul places, Yamazaki Distillery, Hakushu Distillery and Chita distillery.
Yamazaki is Japan’s first and oldest malt whisky distillery, established in 1923 by Shinjiro Torii. Hakushu is the single malt Japanese whisky born in Suntory’s mountain forest distillery. Made from water with a rare softness and maturing in a lush, forested microclimate, the Hakushu Distillery is blessed by the region’s ever-changing seasons. Chita, on the other hand, is traditionally used as the “dashi” or broth that enhances Suntory blends. After a long period of experimentation, Chita has achieved a level of complexity and sophistication to allow the grain to take centre stage.
