The first release from Sheestown Farm as part of Waterford's Origin Series. Sheestown, known locally as ‘the place of the lush grass’, is a rolling, lowland terroir of welldrained loamy soil where Phillip O’Brien has farmed the land for half a century. This expressed has been matured in a mixture of first-fill American oak, virgin American oak and premium French oak.
Earthy notes are rich on the nose, following clove, poached pears and honeycomb. The palate has a mix of spices at first sip, with clove flavours developing alongside citrus peel, marmalade and honey. Expect spice to linger in a long finish, leaving a pleasant and warm tingle in the aftertaste.
