Bimber is a craft micro-distillery based in north London with big ambitions. They create gins, rums, vodkas, and a whole host of spirits, but these days it is becoming known for its first-rate whiskies. Bimber use only natural ingredients and traditional methods to craft a unique range of award-winning spirits.

About Bimber

One of the few distilleries based in London, Bimber’s expressions are made to work on two fronts; to celebrate London and its long history of distilling, and compete at the highest level with any other malt whisky distillery.  The barley, a mix between Concerto and Laureate strains, comes from a single farm in nearby beautiful Hampshire. They do a traditional floor malting, a labour-intensive and rare practice to see in operation. Bimber source American oak and sherry casks from the USA and Europe, and with its onsite cooperage the team can check all casks and repair and re-char the casks when required.

Bimber Distillery has submitted plans at the start of 2021 to build a new Scotch whisky distillery in Dunphail, south of Forres, and is considering moving to a bigger site in London.

History

Bimber is one of the first London distilleries to produce single malt whisky for over a century. Bimber’s first casks were laid down on the 26th May 2016, and it released its inaugural single malt whisky in September of 2019. Bimber also release a variety of gins, vodkas, and even an occasional rum. This wide array of distilling expertise helps each expression to be a leader in its own field.
