Whisky produced in Canada – which must be mashed, distilled and and aged within the country – is typically made using a large quantity of corn spirit with a high percentage of rye grain, resulting in a lighter spirit style with characteristic rye spice. In fact, the practice is so common that the term ‘Canadian whisky’ has become interchangeable with ‘rye whisky’ or ‘Canadian rye’.
