Fresh Coconut marque la sixième et dernière édition de la collection Harmony de The Macallan. Lancée en 2021 avec Rich Cacao, inspiré par les notes gourmandes du chocolat, cette série boucle la boucle en revenant sur le domaine de The Macallan Estate pour son ultime expression. L'aspect technique le plus intéressant de cette édition réside dans le choix des fûts. Le chêne américain est naturellement riche en lactones, les composés responsables des arômes caractéristiques de noix de coco et de vanille. L'utilisation de fûts de chêne américain ayant contenu du xérès constitue ainsi une approche particulièrement pertinente pour révéler naturellement ces saveurs, sans avoir recours à la moindre intervention aromatique. Les fûts de bourbon apportent quant à eux davantage de fraîcheur, de douceur et de notes vanillées, tandis que l'association de ces deux types de maturation confère au whisky un profil à la fois élégant et équilibré, où la noix de coco vient enrichir la palette aromatique sans jamais prendre le dessus.
