Nose: heather and cut grass initially, with honey, pear, wood shavings, hints of butter and New York cheesecake.
Palate: butterscotch and vanilla from the bourbon casks, with the rum casks giving a sugar cane and molasses crescendo, and a touch of apricot, peach and paprika.
Finish: soft smoke, toffee apples and raising with some almonds and apricot jam.
