Hailing from the north west of London, Bimber take a traditional and hand-crafted approach to creating their single malt. The barley is from a single farm and prepared using traditional floor malting. After the grist is hand-mashed, the wort is fermented slowly for a very long time of around seven days! This brings out fresh fruit and citrussy notes in the wash.
Their first release was back in September 2019 and this won multiple awards, selling out within only a few hours. This latest batch is matured in first-fill bourbon with a finish in Oloroso sherry casks imparting notes of raisins and cinnamon spice to compliment their tropical, fruit forward spirit. It is bottled at a cask strength of 51.7% abv and limited to 920 bottles.
