A category of its own, Brandy is a celebration of elegance, beauty, and harmony. Brandy is a wide category that includes Cognac as well as many other sub-categories, but it is categorised loosely as a liquour made by distilling wine. V.S. means 'very special', has a three star rating, and this designates a blend in which the youngest brandy has been stored for at least two years in a cask. V.S.O.P., "very superior old pale", has a five star rating, designates a blend in which the youngest brandy is stored for at least four years in a cask. XO, "extra old", designates a blend in which the youngest brandy is stored for at least six years. Hors d'âge, "beyond age", is a designation which is formally equal to XO for Cognac, but for Armagnac designates brandy that is at least ten years old. Although French brandy is the most well-known, brandy-producing countries are found all over the world, with their own systems of grading and cask maturation. Cognac is named after the commune of Cognac, France, but it is produced in the surrounding wine-growing region in the departments of Charente and Charente-Maritime.
