With a name meaning 'green valley' Dailuaine distillery is a fresh example of Speyside whisky. It is rarely seen as a single malt, having historically been the backbone of many quality blends.
Currently owned by Diageo, Dailuaine finds its home in Aberlour, at the foot of Ben Rinnes. The rich and robust whisky is made through long fermentation, rapid distillation and the use of stainless steel in the condensers to decrease copper contact.
In 1889, Dailuaine became the first distillery to be fitted with a "pagoda" roof above the malt kiln. Designed by Charles Cree Doig, a famous distillery architect, the pagoda roof went on to be installed in most malt distilleries and, although very few distilleries still malt their own barley on-site, they often maintain their pagoda roof as this has become the recognised symbol of a Scotch malt distillery.
Dailuaine is a part of Diageo's much loved Flora and Fauna range, in the form of a rich 16 Year Old.
Dailuaine is also a dark grains plant and processes all of the spent grains from Diageo’s southern and central distilleries
History
Founded by William Mackenzie in 1852, during the 19th century Dailuaine was one of the largest and most innovative distillery’s of its time. In 1884, it installed Scotland’s very first pagoda on their kiln, which minimised the contact time between peat smoke and drying malt, resulting in a less smoky style. After a devastating fire in 1917, it was completely rebuilt by their new owners, DCL – now Diageo.
