Located some 60 miles northwest of Tokyo, the climatic variations of the region massively benefit the maturity of the distillery’s whisky. Chichibu’s humid summers and cold winters are ideal for whisky production, with temperature variation amplified by its mountainous location. Within Japan’s smallest distillery, Ichiro Akuto utilises his intense attention to detail to craft some of the most coveted bottles of whisky around.
Chichibu uses two pot stills imported from Scotland by Ichiro Akuto's father.
According to Akuto, Chichibu whisky is intended to be drunk over time and savoured.
History
Ichiro Akuto’s family distilled sake in Chichibu from 1625 to 2000, and he lends his inherited spirit crafting talents to the pursuit of making the finest Japanese whisky. He founded Venture Whisky Ltd in 2004, just as his family sake business was selling up shop. The first project was Chichibu whisky, made with the two pot stills his father had purchased in Scotland after the Second World War to dabble in whisky maturation. Since then, Akuto has built Chichibu whisky into one of the most collectable brands in the world.
