Balvenie 1971 DCS Chapter 4 Description
This single cask expression from The Balvenie distillery is part of the DCS Compendium Chapter 4 release. Distilled on 8th March 1971 and filled to a European oak Oloroso sherry butt to mature for the next 47 years, Malt Master David C Stewart said this expression "is representative of the time we were experimenting to release The Balvenie as a Single Malt and releasing Founders Reserve 8 Year Old."The nose has exotic spices and dark fruits dusted with brown sugar. The palate is rich and deep with honeycomb and oak layers, before dried fruits and malty sweetness in the finish.
The complete Balvenie DCS Compendium, when complete, is five chapters long and comprises twenty-five single cask expressions and a book. The book itself, a collaboration between David Stewart and Dr Samuel Simmons, has chapters covering distillery style, the influence of oak, secrets of the stock model, expecting the unexpected and the Malt Master’s indulgence, with each set of whiskies exploring these themes.
