A limited release from Fife’s revered farm distillery, owned and operated by brothers Francis and Ian Cuthbert and run during the farm’s quiet periods in mid-summer and winter.
One of just 3294 bottles, it’s drawn from a selection of seventeen first-fill ex-bourbon barrels, distilled and filled between November 2010 and the end of January 2011 and matured in the upper level of Daftmill’s Warehouse 2 before being bottled in June 2026 at Fife Strength (the distillery’s playful term for cask strength).
It was made from Publican barley, grown in the farm’s 43-acre field, harvested by John and Sandy in late August 2009 and dried and stored on the farm before being malted in Alloa in summer 2010. Presented at 56.3% abv, free from added colour or chill filtration.
Fresh lemon zest and lemon curd folded through with sweet vanilla on the nose, a gentle biscuit richness beneath. Rounder and more indulgent on the palate, caramels and soft vanillas making their presence felt alongside the lively citrus notes, the bourbon casks adding depth, sweetness and texture without overwhelming Daftmill’s characteristic freshness. The citrus notes and sweetness linger and intertwine on the elegant, lightly drying finish.
