Our friends at The Loch Fyne have been on a roll with their Fynest range lately, bottling a succession of well-aged, beautifully developed yet brilliant value single cask drams. This is another cracker, with Aultmore’s clean, silken-textured yet weighty spirit drawing just enough influence from the refill sherry cask it spent its two decades maturing in to really sing.
Bottled at an exceptionally high cask strength, careful addition of water helps – is almost required to – draw out its fragrant, velveteen secrets. A magical combination of power and poise. It’s one of just 578 bottles, presented at a very potent 65.6% abv without added colour or chill filtration.
Sweet, clean and fresh on the nose at cask strength, with pear drops and eucalyptus honey joined by a slightly floral note that hints at candyfloss. That note becomes richer and deeper with water, turning into an addictively ripe, musky, mango-like sweetness. There’s a satisfying, oily weight to the palate, with barley sugars, honey-poached apricots, crème caramel, chewy dried mango and candied grapefruit rind balanced out by sharper hints of chamomile and orange oil. The sweetness goes down fighting, lingering alongside pleasantly tart citrus notes and tannins on the lengthy finish.
