Single Malt Scotch Whisky
Kingsbarns is a family-owned distillery which produces Lowland whisky in a converted farm steading in the Kingdom of Fife. Established in 2014, the first cask was filled in 2015, and their first bottling, 'Dream to Dram', was released in 2020.
About Kingsbarns
Kingsbarn’s whisky is made from barley sourced from local farms, fresh Fife spring water from Cambo burn and two different types of yeast – one British and one French. The spirit is naturally light and fruity, so they utilise stainless steel washbacks in their process for a cleaner product.
A Doocot is a structure intended to house pigeons or doves. The original farmstead that is now Kingsbarns distillery had its own one, and was the oldest part of the building. The room is now at the centre of the distillery, after being lovingly restored, and is the namesake for their Doocot expression.
Kingsbarn's sherried expression, Balcomie, is matured exclusively in American oak butts that previously held Oloroso sherry, instead of the more typical European oak.
They have their own colony of bees on site, and intend to sell Kingsbarns honey!
History
The distillery was a dream of William Wemyss, after he established Wemyss malts, an independent bottling business company, in 2005. He runs the distillery with his sister, Isabella Wemyss, after opening the distillery in 2014. The Wemyss’ (meaning ‘cave’) are a historic Scottish family whom leased the land to James Haig for Cameronbridge distillery in the 19th century.
