The new Blue Label is inspired by one of the world’s most hard-to-define and alluring flavour profiles, in a partnership of two masters of their craft. World-renowned Chef Kei Kobayashi and Master Blender Dr Emma Walker have joined forces and years of expertise to handpick whiskies like they were ingredients – from salty, smoky notes to savoury, meaty flavours – to blend together as a perfect encapsulation of umami. Selected casks from inland and coastal distilleries were chosen at the height of their maturation for their unique umami profile.

The whisky boasts earthy and woody aromas which, for Chef Kei, evokes memories of early mornings as a young boy walking amongst the mountains in Nagano where the air was pure and the scent of the trees lingered in the air. The palate is beautifully balanced sweet and savoury flavours, with notes of blood orange, red berries and cacoa. A touch of smoked meat, warming salt and pepper with a long, sweet fruit finish.

The idealised drinking experience is a pairing with Oscietra Caviar, as it has an undeniable concentration of umami and mineral character. Creamy and slightly briny, it matches the whisky perfectly, as the inherent cacao and berry tannin in the whisky pair with the savoury nature of the caviar.

Enjoy a spoon of Oscietra Caviar, ensuring that the palate is coated. Once swallowed, take a small sip of the whisky, let that intermingle with the flavours of the caviar, take 10-15 seconds to reflect on the waves of flavour on the palate and savour slowly.
